Holiday Cookie Contest 2012


Poppy Seed Thumbprint Cookie Recipe

  • 1 cup butter, softened
  • 1/2 cup light brown sugar, firmly packed
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons whole blue poppy seeds
  • 1 tablespoon water, if needed
  • 2/3 cup favorite jam, or jelly

  1. Preheat oven to 350F degrees.
  2. In a large bowl with an electric mixer on medium speed, beat the butter, sugar, egg yolks and vanilla until well blended.
  3. Stir in the flour and poppy seeds, mixing just until the dough holds together.
  4. Add 1 tablespoon water to dough if dough doesn't stick together.
  5. Roll 1 tablespoon of dough into a ball (for each cookie) and place at least 1-inch apart on ungreased cookie sheets.
  6. Bake for 2 minutes until cookies start to get shiny. Remove from oven and press the top center of each cookie with your thumb or the back of a spoon to make an indent.
  7. Place back in the oven for another 12 to 15 minutes, until golden.

  8. Remove from sheets to wire racks and cool cookies completely.
  9. Fill each cookie with 1 teaspoon jam/jelly.
  10. Drizzle cookies with melted chocolate if desired.

This recipe makes about 34 Poppy Seed Thumbprints.
