Candy Cane Chocolate Chip Biscotti Cookie

I grew up eating Italian biscotti cookies. My grandma would make them during the holidays. This is a new recipe I came up with this year to share with my family and friends. I wanted to keep the tradition of making biscotti cookies going on in our family. The combination of peppermint and chocolate chips with almond is yummy. I think this recipe is easy for anyone to make. If you have never had a biscotti cookie I suggest you try my recipe. Happy Holidays!

Candy Cane Chocolate Chip Biscotti Recipe

Ingredients:
  • 2 cups of flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 2 tablespoons almond paste
  • 2 large eggs
  • 1/4 cup chopped candy canes
  • 1/4 cup chopped chocolate chips
Directions:
Preheat oven to 350 degrees.

In medium bowl mix flour, salt and baking powder, set aside.

In large bowl beat using a mixer: sugar, butter, almond paste and eggs for two minutes.

Add to large bowl flour mixture and blend until mixed.

Add candy canes and chocolate chips until blended in.

Grease cookie sheet.

Form onto cookie sheet two 10 inch long by 2 inch wide logs.

Bake for 15 minutes.

Remove from oven, with a sharp knife cut logs into 1/2-inch thick slices. Arrange pieces on cookie sheet cut side down.

Bake for 30 more minutes.

Cool and serve with your favorite beverage.

This recipe looks so easy-I think I could make it. Never had biscotti cookies-the combo of the candy cane and chocolate chips sounds YUMMY!!!
