By mixing chopped maraschino cherries and vanilla or white chips into your cookie dough, you get delectable Vanilla Cherry Chip Cookies. Choose semisweet chocolate chips and you end up with luscious Cherry Chocolate Chip Cookies. You really can't go wrong with either Cherry Chip Cookies recipe variation! Or you could split the difference and add half semisweet chips and half vanilla chips for the best of both worlds. This cherry cookie recipe calls for 1/4 teaspoon of almond extract, which goes well with cherries. If you don't like almond flavoring or don't have it, you can substitute 1 teaspoon vanilla extract.
