Double Chocolate Marshmallow Bars

  • 3/4 cup butter, softened
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 3 tablespoons baking cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts, otpional
  • 4 cups miniature marshmallows

Crispy Chocolate Peanut Butter Topping:

  • 1 1/3 cups semisweet chocolate chips
  • 1 cup peanut butter
  • 3 tablespoons butter
  • 2 cups crisp rice cereal
  1. Preheat oven to 350F degrees. Grease a 15x10-inch baking pan and set aside.
  2. In a small mixing bowl, cream butter and sugar until light and fluffy.
  3. Add eggs, one at a time, making sure to beat well after each addition.
  4. Beat in vanilla.
  5. In a medium bowl, stir together flour, cocoa, baking powder and salt.
  6. Gradually add the dry mixture to the creamed mixture. Stir in nuts if using.
  7. Spread mixture into prepared baking pan.
  8. Bake for 15 to 18 minutes.
  9. Leave oven on and remove pan. Sprinkle miniature marshmallows on top of baked layer and put pan back in oven and bake an additional 2 to 3 minutes.
  10. Remove pan from oven and place on wire rack.
  11. Using a knife dipped in hot water, spread melted marshmallows over the top in an even layer.
  12. Continue to cool completely on rack.
  13. Prepare the topping:
    Combine the chocolate chips, peanut butter and butter in a small saucepan. Continually stir over low heat until well mixture is well blended. Remove from heat and stir in crispy rice cereal until well mixed.
  14. Spread topping immediately over bars.
  15. Refrigerate until set.
  16. Cut bars into into desired size and shape.
