Emma's Strawberry Summer Brownies

Ingredients

• 1 egg
• 1 cup melted butter, cooled
• 1 tablespoon vanilla extract or almond extract
• 1 pound fresh strawberries
• 1 cup sugar
• 1/2 cup cocoa powder
• 1 1/2 cups cake flour, more as needed
Optional: 1/2 cup chocolate chips or chopped bittersweet/ dark chocolate, or any kind of nut (pecans are great!)

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie plate or 8 by 8 square pan.

2. Whisk together egg, melted butter, and vanilla in a large bowl.

3. Puree the strawberries and whisk into the butter.

4. Sift together the sugar, cocoa powder, and cake flour.

5. Fold into the butter, and mix until well incorporated.

6. Use more flour if needed to end up with a mixture in between a cake batter and a cookie dough (the strawberries will add additional moisture).

7. Pour the batter into prepared pie plate or pan.

8. Bake in preheated oven until a toothpick inserted into the center comes out clean, 30 to 40 minutes.
