Lacy Oatmeal Florentines


These Lacy Oatmeal Florentines fit the bill perfectly if you are looking for an easy yet sophisticated cookie recipe.

It's a little unique in that it calls for quick cooking oats, but the delicate cookies are tastefully topped with a chocolate drizzle.

Quick cooking oats are more processed than traditional oats and therefore cook up much faster.

Unlike old-fashioned oats, quick cook oats are first cleaned, dehulled, lightly roasted and then steamed and flaked.

The old-fashioned oats are whole oats which are then flattened, yet still contain the entire oat grain.

You will find quite a few cookie recipes that use oats as they are the second most used whole grain (after rice) in the current American diet.

Keep in mind that you will end up with different cookies if you accidentally use old-fashioned oats in a recipe that calls for quick cook oats.

Cookies made with quick cooking oats will tend be softer while old-fashioned rolled oats will make a slightly drier and more chewy cookie.

Lacy Oatmeal Florentines Cookie Recipe

  • 1/2 cup sugar
  • Dash of salt
  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups quick cooking oats
  • 1/4 cup semisweet chocolate chips
  • 2 tablespoons butter
  1. Preheat oven to 375F degrees.
  2. Lightl grease cookie sheets with non stick spray and set aside.
  3. In a mixing bowl, beat sugar, salt, 1/2 cup butter and vanilla until light and fluffy.
  4. Stir in oats and mix well.
  5. Drop dough by teaspoonfuls spaced about 2 inches apart, onto prepared cookie sheets and then flatten slightly.
  6. Bake for 4 to 6 minutes or until edges are golden brown.
  7. Remove from oven and let cookies stand on sheets for 2 minutes before transferring to cooling racks to cool completely.
  8. In a small saucepan, melt chocolate chips and 2 tablespoons butter, stirring constantly until well blended.
  9. Drizzle a small amount of melted chocolate over each cookie.
  10. Refrigerate florentines until chocolate is set.

This recipe makes about 3 dozen Lacy Oatmeal Florentines.
