Butterscotch Haystacks - No Bake Drop Cookies Recipe

  • 1 12-ounce package butterscotch chips
  • 1/2 cup peanut butter
  • 1 8.5-ounce can chow mein noodles
  1. Melt the butterscotch chips and peanut butter over simmering water in a double boiler or in the microwave.
  2. Remove from the heat and stir in the chow mein noodles.
  3. Drop by teaspoonfuls onto waxed paper or silicone mat lined cookie sheets.
  4. Refrigerate until firm.

  • 1/2 cup packed dark brown sugar
  • 1/2 cup dark corn syrup
  • 3/4 cup cream peanut butter

  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 4 cups crisp rice cereal
  1. Line cookies sheet with wax paper, parchment, or silicone liners.
  2. In a medium-size saucepan combine the brown sugar and corn syrup.
  3. Bring the mixture to a boil over medium high heat, stirring constantly until the sugar is totally dissolved. Remove pan from the heat.
  4. Stir in the peanut butter, vanilla and spices until smooth.
  5. Add the cereal, stirring until well coated.
  6. Working quickly, drop the mixture by heaping teaspoonfuls onto the prepared sheets.
  7. Let stand in a cool place to harden.

  • 2 cups Corn Chex cereal, coarsely crushed
  • 1/2 cup slivered almonds
  • 1/2 cup chopped dried apricots
  • 1 1/4 cups white chocolate chips
  • 1/4 teaspoon almond extract
  1. Line cookies sheet with wax paper, parchment, or silicone liners.
  2. In a large bowl combine the cereal, almonds, and apricots and set aside.
  3. In a medium size microwave-safe bowl, melt the white chocolate chips on high for 1 to 2 minutes, stirring at 20 second increments to make sure the chocolate doesn't burn.
  4. Stir in the almond extract.
  5. Stir in the cereal mixture, until it's well coated.
  6. Working quickly, drop by tablespoonfuls onto the prepared sheets.
  7. Let cool until firm.
  8. Store in an airtight container between sheets of wax paper.

A quick and easy no bake cookies recipe with the flavors of bananas foster. If you want to make these tasty treats without the alcohol, replace the rum or brandy with 1 1/2 tablespoons of water and 1 1/2 teaspoons of rum or brandy flavored extract.
