Oatmeal Brownies

These oatmeal brownies are some of the best, healthy, easy brownies we've ever tasted and they travel extremely well.

In addition to being easy to make they are full of heart-healthy oats.

Did you know that quick-cooking and old-fashioned rolled oats are interchangeable unless the recipe calls for a specific type.

On the other hand, instant oatmeal is not the same and should not be used for baking.

Bake up a batch of these sweet and wholesome brownies with oatmeal for your next casual gathering, picnic, or potluck.

This recipe makes a big batch of Oatmeal Brownies so you will have plenty for sharing. These brownies are perfect for tucking into lunch boxes too!

Classic Oatmeal Brownies Recipe

  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed all brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups rolled oats
  • 2 cups butterscotch chips
  1. Preheat oven to 370F degrees.
  2. Lightly grease a 15x10-inch baking pan and set aside.
  3. In a small bowl, combine the flour, baking soda, salt, and cinnamon.
  4. In a large bowl, beat the butter, sugars, eggs, and vanilla with an electric mixer until creamy.
  5. Gradually beat in the flour mixture, just until incorporated.
  6. Stir in the oats and butterscotch chips.
  7. Spread the dough evenly into the prepared pan.
  8. Bake for 18 to 22 minutes, or until very lightly browned.
  9. Remove from the oven and let cool completely on a wire rack.
  10. Cut brownies into desired size and shape.

Brownies with Oatmeal Recipe Variations:

  • Substitute whole wheat flour for the all-purpose flour to create even healthier and heartier brownies with oatmeal.
  • Add 1 cup coconut for luscious oatmeal and coconut brownies.
  • Add 1 cup of chopped nuts for nutty chewy brownies with oatmeal.
  • Replace 1/2 the all purpose flour with oat flour to create healthy oat flour brownies with oatmeal.

Classic Oatmeal Brownies Recipe

Prep Time: 15 minutes
Bake Time: 50 minutes
Time to Cool: 2 hours

  • 2 1/2 cups quick-cooking or old-fashioned oats
  • 3/4 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 3/4 cup butter, melted
  • 1 package Betty Crocker Original Supreme brownie mix (with chocolate syrup)
  • 1/3 cup water
  • 1/3 cup vegetable oil
  • 2 eggs for fudgy brownies or 3 eggs for cake-like brownies
  • 1/2 cup chopped nuts
  1. Preheat oven to 350F degrees and lightly grease a 13x9-inch baking pan and set aside.
  2. In a medium bowl, mix the oats, flour, brown sugar and baking soda.
  3. Stir in the melted butter.
  4. Reserve 1 cup of the oat mixture and press the remaining oat mixture into bottom of prepared pan.
  5. Bake for 10 minutes then remove from oven and allow to cool for 5 minutes.
  6. In a large bowl, stir the brownie mix, chocolate syrup, water, oil and eggs with a wooden spoon until well blended.
  7. Stir in the nuts.
  8. Spread brownie mixture over baked layer and then sprinkle reserved 1 cup of oat mixture on top of brownie layer.
  9. Bake for 35 to 40 minutes or until a toothpick inserted two inches from side of pan comes out clean or almost clean.
  10. Remove from the oven and cool pan completely on a wire rack, about 2 hours.
  11. Cut brownies into desired size and shape.

This recipe makes about 48 Classic Oatmeal Brownies.
