I wanted a cookie that would put a smile on everyone's face from kids to adults. Who doesn't love a cookie that is colorful, full of sprinkles and tastes like a mix between cookie and cake?

So with all that I decided to make these easy and light cookie!

Funfetti Cake Mix Cookies


1 18.9 oz box Pillsbury Funfetti Cake Mix

1/4 Cup Canola Oil

1/4 Cup water

1 egg or egg substitute


Preheat oven to 350

Mix all the ingredients together.

Drop spoonfuls of cookie dough, spaced about two inches apart, on parchment-lined baking sheets.

Bake for 10 minutes or until bottom is very lightly brown.

Makes 47 Cookies:

Calories per cookie: 57, Fat: 2.1, Sodium: 78, Carbs: 9.2, Fiber: .1, Sugar: 5.9, Protein: .4

I made funfetti cookies at the holidays using the holiday funfetti cake mix with red and green sprinkles and thought they were some of the most festive cookies I'd ever made.
