Cathedral Window No Bake Chocolate Cookies

These quick and easy no bake chocolate cookies showed up regularly on holiday cookie trays back when I was a kid.

I knew them as cathedral windows or stained glass cookies since that was what Mom called them.

Mom clipped the recipe for these easy chocolate no bake cookies from the back of a bag of multi-colored mini marshmallows decades ago and pulled it out for me recently so I could include it here.

The official recipe on the bag of marshmallows was called chocolate marshmallow logs, not nearly as descriptive as what we knew them as.

When the logs are sliced, the mulit-colored marshmallows take on the mosaic appearance of stained glass.

Cathedral Window No Bake Chocolate Cookies Recipe

  • 1/2 cup (1 stick) butter or margarine
  • 2 cups (12 ounces) semi-sweet chocolate chips
  • 1 cup chopped walnuts
  • 1 bag (10.5 ounces) colored mini marshmallows (about 5 cups)
  • 2 1/3 cups (7 ounces) coconut
  1. In a medium-sized saucepan, melt the butter and chocolate chips over very low heat, stirring often, until melted and smooth.
  2. Remove from the heat and cool slightly.
  3. In a large-sized mixing bowl combine the nuts and marshmallows.
  4. Add the chocolate and stir until the marshmallows and nuts are well coated.
  5. Tear five 9-inch sheets of waxed paper and sprinkle each generously with the coconut.
  6. Divide the chocolate marshmallow mixture into fifths and place each fifth on a sheet of waxed paper.
  7. Roll tightly into 2-inch diameter log.
  8. Wrap tightly and refrigerate overnight or until firm.
  9. Before serving, unwrap from waxed paper and cut into 1/2" slices.
