Chewy Chocolate Chip Brownie Cookies

Is it a brownie? Or is it a cookie? These yummy treats are little of each. What could be better than brownies, baked as chocolate chip cookies? Nothing that I can think of - and my twins (Jacob and Jared) agree too.

Chocolate Chip Brownie Cookies

Ingredients:
  • 1 1/2 cups firmly packed light brown sugar
  • 2/3 cup shortening
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 cups (12 ounces) semisweet chocolate chips


Instructions:
Preheat oven to 375F degrees. Set aside ungreased baking sheets.

In a large bowl, beat brown sugar, shortening, water and vanilla on medium speed until well mixed. Add eggs and beat well.

In a medium bowl, stir together flour, cocoa, salt and baking soda. Gradually beat dry mixture into moist mixture on low speed, just until blended.

Stir in chocolate chips until distributed throughout.

Drop dough by heaping tablespoons at least 2 inches apart onto baking sheets. Or use a medium cookie scoop for more uniform cookies.

Bake for 7 to 9 minutes or until cookies are set. (Be careful to not overbake).

Allow cookies to sit on sheets for two minutes before transferring to wire racks to cool completely.

This recipe makes about 3 dozen chewy Chocolate Chip Brownie Cookies.
