Chocolate Chip Marshmallow Sandwich Cookies

Quite honestly, this is one of the simplest cookie recipes I have ever made. And the best part is that my children, Toby and Sarah, love to help! It's all based around chocolate chip cookie mix, so there's less mess and very little measuring. While the cookies are baking, we prepare the yummy marshmallow filling, and then it's up to the kids to do all the assembly work.

Chocolate Chip Marshmallow Sandwich Cookies Recipe

Ingredients:
Cookies:
  • 1 package chocolate chip cookie mix
    • 1 egg
    • 1/3 cup canola oil
    • 3 tablespoons water

    Marshmallow Creme Filling:
    • 1 1/2 cups marshmallow creme (we like Fluff or Jet-Puffed)
    • 3/4 cup butter, softened
    • 2 1/2 cups confectioners' sugar
    • 1 1/2 teaspoons vanilla


    Directions:
    Preheat oven to 375F degrees. Set aside ungreased baking sheets.

    In a large mixing bowl, stir together cookie mix, egg, oil and water until well blended.

    Drop dough by rounded teaspoons (or use a cookie scoop) at least 2 inches apart, onto baking sheets.

    Bake 8 to 10 minutes, or until edges turn golden brown.

    Remove from oven and allow cookies to cool on sheet for 1 minute, then transfer to wire racks and cool completely.

    Meanwhile, prepare the Marshmallow Filling:
    In another large bowl, beat together marshmallow creme, butter, confectioners' sugar and vanilla until smooth.

    Assemble your sandwich cookies by spreading about 1 tablespoon of marshmallow filling over the bottoms of half the cookies. Top with remaining cookies and press together gently.

    You may want to refrigerate them briefly to allow the filling to set.

    Sandwiches should be store in an airtight container.
