Double Chocolate Coco-Oat Chews

This is one of my favorite easy cookie recipes - I simply refer to it as "old reliable"!

I mean what could be easier than whipping up a batch of decadent chocolate cookies without a lot of mixing and measuring? The reason they're so easy is because it all begins with a box of Devil's Food Cake Mix. And you probably already have the other ingredients right in your pantry.

I was really hesitant to make my cookies with cake mix, but they really do taste great (in fact my kids can't even tell difference between these and "from scratch" cookies).

Double Chocolate Coco-Oat Chews

Ingredients:
  • 1 package Devil's Food Cake Mix
  • 1 1/3 cups old-fashioned oats, uncooked
  • 1 cup flaked coconut, toasted and divided
  • 3/4 cup butter, melted
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 5 chocolate bars, cut (or broken) into squares

Directions:
Preheat oven to 350F degrees.

In a large mixing bowl, stir together the cake mix, oats, 1/2 cup coconut, melted butter, eggs and vanilla, just until combined. Cover and refrigerate at least 15 minutes to make the dough easier to handle.

Roll dough into 1-inch balls and place about 2 inches apart on ungreased cookie sheets (or sheets lined with parchment).

Bake for 12 minutes, or until tops begin to crackle open.

Remove from oven and press one chocolate square into center of each cookie. Sprinkle remaining 1/2 cup coconut over tops of cookies. Transfer cookies to wire racks to cool completely.

This recipe makes about 4 1/2 dozen Double Chocolate Coco-Oat Chews.
