A No Bake Cookies Recipe For No Bake Chocolate Marshmallow Bars!

Rich and chewy, crisp, and gooey is one way to describe these delicious no bake chocolate cookies. No bake chocolate marshmallow bars have been a favorite no bake cookies recipe since the first time we made them.

If you are like me and have learned to always have a stash of baking chips and reserve bag of miniature marshmallows in your baking cupboard, you can stir together these luscious no bake chocolate marshmallow bars on a moments notice.

My family thinks the most difficult part of these no bake chocolate cookies is allowing them 30 minutes in the refrigerator to get firm and I would have to agree!

No Bake Chocolate Marshmallow Bars Recipe

  • 1/2 cup butter
  • 1 cup butterscotch chips
  • 2 cups semisweet chocolate chips
  • 1 cup creamy peanut butter
  • 4 cups crisp rice cereal
  • 3 cups miniature marshmallows
  • 3/4 cup chopped nuts, toasted and cooled (optional)
  1. Lightly spray an 9x13-inch square baking pan with cooking spray and set aside.
  2. In a large saucepan over low heat melt the butter and both kinds of chips, stirring constantly until melted and smooth.
  3. Stir in peanut butter until blended.
  4. Remove saucepan from the heat.
  5. Add the cereal, marshmallows and nuts (if using) and stir to combine and coat well.
  6. Pour the mixture into the prepared pan and press into place with clean moist hands or a large square of wax paper.
  7. Cool completely.
  8. Cut into desired size bars.
  9. Store in a covered container between layers of wax paper.
