Reese's Pieces Blondies

This is a fun recipe with a slightly unusual take on the ever-popular chocolate and peanut butter flavor combination. You'll be creating a wonderfully moist and chewy peanut butter blondie and topping with fudgy chocolate frosting and Reese's Pieces baking bits. It's almost like a yummy homemade candy bar!

Reese's Pieces Blondies

Ingredients:
  • 2/3 cup butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup peanut butter, creamy or crunchy
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup milk>
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/3 cups (10 ounces) Reese's Pieces baking bits, divided
  • 1/4 cup (1/2 stick) butter, softened
  • 1/4 cup cocoa powder
  • 1 tablespoon light corn syrup
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners' sugar


Instructions:
Preheat oven to 325F degrees. Lightly grease 13x9-inch baking pan, or for easier clean-up, first line the pan with foil (leave it hanging over the edge on two opposite sides) and lightly grease the foil.

In a large mixing bowl with an electric mixer on medium speed, beat 2/3 cup butter, brown sugar, granulated sugar and peanut butter until smooth.

Beat in eggs and vanilla until combined. Gradually beat in milk.

In a small bowl, stir together the flour and baking powder. Gradually beat in dry flour mixture until thoroughly combined.

Stir in 1 cup Reese's Pieces until distributed throughout.

Spread batter evenly into prepared pan.

Bake 40 to 45 minutes, until a toothpick inserted near the center comes out almost clean.

Remove pan from oven and cool completely on a wire rack.

Meanwhile prepare the Chocolate Fudge Frosting:
In a medium bowl, beat 1/4 cup butter, cocoa powder, corn syrup, milk and vanilla until smooth. Slowly beat in the confectioners' sugar until frosting is desired spreading consistency.

Spread fudge frosting over cooled blondies and then sprinkle remaining 1/3 cup Reese's Pieces on top.

Cut bars into desired size and shape.

This recipe makes about 36 Reese's Pieces Blondies.
