Five C's Cookies (Chocolate Chip Caramel Crunch Cookies)

These cookies came out of need for a cookie that could be regular or sugar-free and a all-time favorite with everyone.

My good friend, who at the time was my new baker for my new diabetic bakery, and I were playing around and came up with these cookies.

Everyone loves them and they can't tell the difference between the regular or diabetic cookies. Please Enjoy!!!!

Five C's Cookies (Chocolate Chip Caramel Crunch Cookies)

Ingredients
  • 2 1/4 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup margarine or butter
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups chocolate chips
  • 1 bag Werthers Hard Caramel Candy, crushed


Directions
Mix flour and baking soda in small bowl and set aside.

Mix both sugars and butter until light and fluffy.

Mix (on low speed) and add salt, vanilla and eggs, beat for 1 minute.

Add flour mix, stir in chocolate chips and candy.

Drop by rounded tablespoonfuls onto cookie sheet lined with lightly floured and greased wax paper.

Bake at 350F degrees for 8-10 minutes.

Cool 1-2 minutes then transfer to a wire rack.

Store 1 week in a air tight container.


Diabetic Recipe Modifications

Use Nevella sugar, Ideal Brown Sugar, and Werthers Sugar Free Hard Caramel Candy.
