Fudge Marble Peanut Butter Pinwheels

This is one of my favorite easy cookie recipes to make! Not only do I love the combination of chocolate and peanut butter, but they're so easy to assemble with only 5 ingredients.

There is some effort in order to get the dough rolled out, but it's so much simpler than people think when they see the end result.

These pinwheel (or spiral) cookies look really fancy and everyone who tries them loves them, but never seems to think they could make them on their own.

I am the first to admit, if I can make these tasty cookies look good, you can too!!

Fudge Marble Peanut Butter Pinwheels

Ingredients:
  • 1 package Fudge Marble Cake Mix
  • 1/2 cup butter, melted
  • 1/3 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 1 package (3 ounces) cream cheese, softened

Instructions:
In a large mixing bowl, combine the cake mix (set aside the marble packet) and melted butter and beat on medium speed until well mixed.

Divide the dough in half.

Blend the peanut butter into half the dough.

In a small mixing bowl, combine the contents of the marble packet with the vanilla and cream cheese and beat until thoroughly combined. Blend fudge mixture into remaining half of dough (that doesn't have the peanut butter mixed in).

Divide each portion of dough in half.

Roll out half of each dough (1 fudge + 1 peanut butter) between two pieces of waxed paper until you have two 12x9-inch rectangles.

Remove top sheet of waxed paper from each rectangle. Place peanut butter dough on top of chocolate dough and slightly press together to form a light seal.

Remove waxed paper from top of dough.

Starting with the longer (12 inch) side, roll up like a jellyroll.

Repeat with remaining two halves of dough.

Wrap each roll in waxed paper and refrigerate for at least one hour. (If you like, you can tightly roll dough with plastic wrap and refrigerate or freeze to slice and bake later).

When you're ready to bake your cookies, preheat oven to 375F degrees.

Cut chilled dough into thin slices about 1/8-inch thick and place 1 inch apart on ungreased baking sheets.

Bake for 7 to 10 minutes, or until set.

Remove pan from oven and allow cookies to sit for one minute before transferring to wire racks to cool completely.

This recipes makes about 11 dozen cookies.
