Without further ado, here's the recipe you've been waiting for.

Maple Walnut Oatmeal Cookies Recipe

  • 1 1/2 cups old-fashioned oatmeal
  • 3/4 cup desiccated (unsweetened) coconut
  • 1 1/3 cups all purpose flour
  • 1/2 teaspoon coarse salt
  • 2/3 cup packed light-brown sugar
  • 8 tablespoons (1 stick) plus 1 tablespoon unsalted butter
  • 3 tablespoons pure maple syrup
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water
  • 1 teaspoon pure maple extract
  • 1 cup (2 3/4 ounces) walnuts, coarsely chopped
  1. Position one of your oven racks in the middle of your oven and preheat oven to 300F degrees. Line your cookie sheets with parchment paper and set aside.
  2. In a medium bowl, combine oatmeal, coconut, flour, salt and brown sugar. Set aside.
  3. In a small saucepan over medium heat, combine butter, maple syrup and golden syrup.
  4. Heat until butter is melted. Remove from heat and set aside.
  5. In a small bowl, combine the baking soda with boiling water. Immediately stir this mixture into the melted butter until combined. Add the maple extract. Stir into the oat mixture.
  6. Fold in walnuts.
  7. Form cookie dough into balls (about 3 tablespoons each) and place about 3 inches apart onto prepared cookie sheets.
  8. Flatten each of the balls slightly with the back of your hand or bottom of a glass.
  9. Bake cookies until golden brown and set, about 20 minutes.
  10. Transfer cookies to wire rack to cool completely.
  11. Can be stored at room temperature for up to one week in air tight container.
