Oatmeal Carrot Cookies

Here's a fun recipe that offers a twist to more traditional oatmeal cookies.

These oatmeal carrot cookies result in a soft and chewy spice cookie that can be made with our without raisins.

You'll find all the usual and expected ingredients in these cookies including brown sugar, vanilla, cinnamon and cloves.

But who would expect that simply adding shredded carrots would dress them up so much?

Oatmeal Carrot Cookies Recipe

  • 3/4 cup butter
  • 1 3/4 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 2 cups rolled oats, uncooked
  • 1 cup finely shredded carrots
  • 1 cup raisins (optional)
  1. Preheat oven to 375F. Line baking sheets with parchment paper or set aside ungreased sheets.
  2. In a large mixing bowl with an electric mixer on medium-high speed, beat the butter until softened.
  3. Add half the flour, brown sugar, granulated sugar, egg, baking powder, vanilla, cinnamon, baking soda and cloves and continue beating until thoroughly combined. Beat in the remaining flour.
  4. Stir in the rolled oats, shredded carrots and raisins until distributed throughout.
  5. Drop the dough by rounded teaspoonfuls onto the baking sheets, about 2 inches apart.
  6. Bake about 10 to 12 minutes, or until edges are lightly browned. You may want to turn the cookie sheet around halfway through the cooking time to ensure that the cookies bake evenly.
  7. Remove from oven and transfer cookies to wire racks to cool completely.

This recipe makes about 48 Oatmeal Carrot Cookies.
