Frosted Chocolate Nut Chews Recipe

Cookies:

  • 2 squares (1 ounce each) unsweetened chocolate
  • 1/2 cup (1 stick) butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/3 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup mixed salted nuts, coarsely chopped

Chocolate Frosting:

  • 2 squares (1 ounce each) unsweetened chocolate
  • 2 tablespoons butter
  • 2 cups confectioners' sugar
  • 2 to 3 tablespoons water
  1. Preheat oven to 400F degrees. Line cookie sheets with parchment paper or set aside ungreased sheets.
  2. In the top of a double boiler over hot (not boiling) water, melt 2 squares unsweetened chocolate. Remove from heat and let cool.
  3. In a large mixing bowl, beat butter and granulated sugar until smooth.
  4. Beat in egg, melted chocolate, buttermilk and vanilla until light and fluffy.
  5. Gradually stir in flour, baking soda and nuts until well mixed.
  6. Drop dough by teaspoonfuls at least 2 inches apart onto cookie sheets.
  7. Bake 8 to 10 minutes or until set.
  8. Remove from oven and immediately transfer cookies to wire racks to cool completely.
  9. Meanwhile, prepare the Chocolate Frosting:
    In a small, heavy-duty saucepan over low heat, melt 2 squares unsweetened chocolate and butter until melted. Stir continuously to prevent burning. Add confectioners' sugar and stir in just enough water until icing is smooth and spreadable.
  10. Spread frosting on tops of warm cookies. Allow frosting to set before serving.
  11. Store cookies in an airtight container between sheets of waxed paper.

This recipe yields about 48 Frosted Chocolate Nut Chews.
